Mac OS is pretty much stable. Unlike Windows you're not constantly harassed
with fixes and packs.
That's not to say you do not get updates.

Now this is a different kettle of fish.
Leopard and Snow Leopard are quite different.
Depending what you are running on your server now and if you want to upgrade
to Snow Leopard, the critical thing is Snow Leopard only runs on Intel machines.
Let's be honest, if you're not there yet, there is no point in buying a new machine just to run Snow Leopard.
